This is a classic Greek side dish, which can be served with meat or vegetable dishes. Frequently used with souvlaki or gyros. INGREDIENTS 1 cucumber 2-3 cloves of garlic 1 teaspoon medium wine vinegar 300g full-fat strained Greek yoghurt 100 ml extra virgin olive oil ½ tablespoon finally chopped dill leaves Salt and pepper to taste”

“PREPARATION

Remove the skin of the cucumber and coarse grate it. Grate the garlic into fine pieces. Salt the cucumber and leave it in a colander for half an hour to drain the excess water well. Place grated cucumber in a bowl; add the garlic and the remainder of the ingredients. Use a fork to mix all the ingredients well.   1. Always loved this – and have seen it seldom since leaving NYC. Thanks for letting me know how to make it. I always wonder about those “salting” directions – are you supposed to rinse it off before adding cukes, eggplant, etc. to the rest of the ingredients? Directions rarely say.
